A Menu That Moves Like a Mountain Path

In the Alps, ingredients are shaped by terrain and season, and each one carries a sense of place.

Dairy from high pastures holds the imprint of wild herbs, cheeses are matured in mountain air, and cold-water fish come from glacial lakes. Rye and buckwheat flourish where other grains fall short, and curing is a practical answer to winter.
